Count Your Blessing Monday

My blessing? A potato. A potato? Yes - a potato. Actually, it represents the food we have been gathering from our garden. I am so grateful the LORD has allowed us the space for a garden, the knowledge to garden, the weather to garden, and the desire to be self-sufficient. This potato was one of the first we harvested and now we have two baskets full in storage under the house. That night we had baked potatoes for dinner. It was the best baked potato I'd ever eaten!

your potatoes are a wonderful blessing! We have none this year as everything dried up with the heat. But am looking forward to next year.

Isn't it exciting when you sit down to a meal from your own land? A very nice potato!! How will you store them under your house? One reason we do not grow potatoes here is because I don't have a basement. I tried keeping them in the attic, but it is too dry and too cold.

Great looking potatoes and I know how good the baked potato from your own garden must have tasted.

We used to produce much of our own food.

We celebrated many Thanksgiving Days, with the meal made entirely of things we produced on our land. It is a wonderful blessing.

What a sweet post and how often people forget that such a thing IS a blessing. How lucky are you to have the gift of this land in which to grow your own food.

Marci,
We're storing potatoes in baskets kept in the crawl space under the house. Since our house sits on a slope, we are fortunate to have a tall crawl space on one side - I can stand up! This is the first season we will be storing potatoes in the NW so we'll see how it goes. In KS, my grandparents used to store potatoes in 5 gallon buckets they kept in the basement. Just keep them out of the light and in a cool climate.
